Mexican Chicken Casserole
Ingredients:
1-3 lbs. Chicken, cooked and shredded
1 Chopped Onion
2 4-oz Cans Mild Green Chilies
2 Tbs.. oil
1 12-oz Can Enchilada Sauce
1 C. Chicken Broth
1 C. Sour Cream
2 C. Grated Monterey Jack Cheese
12 Corn Tortilla
1 C. Cheddar Cheese
Method:
Sauté onion and chilies in oil until soft. Add sour cream , broth , jack cheese
and enchilada sauce. ( Stir until melted ) Add chicken. Put a layer of tortillas
in the bottom of a greased 3 quart casserole. Spoon chicken mixture over
tortillas , after each layer add cheese if wanted. Continue layers and top with
cheese. Cook uncovered at 300 degrees until bubbly!
