Penne Super Casserole
8 ounces penne noodles
28 ounces (1 jar) Prego sauce
16 ounces (1 container) creamed cottage cheese
10 ounces (1 bag) frozen chopped spinach, thawed and well-drained
3 cups grated cheddar cheese
1 teaspoon sage
Salt and pepper
Cook penne in water following directions. In a large bowl, beat eggs until
fluffy. Stir in cottage cheese, spinach, 1/2 cup cheddar cheese, sage, salt and
pepper. Mix well. Preheat oven to 350 degrees Fahrenheit. Place a coating of
sauce in the bottom of a 13-1/2 x 9 x 2 inch baking disk. Cover with 1/2 of the
penne, 1/2 of the remaining grated cheddar and 1/2 of the sauce. Repeat layers.
Bake at least 45 minutes or until hot.
Yield: about 8 servings
