Poppy Seed Poultry Casserole

2 C. water
1 C. uncooked long grain white rice
1 (10.75 oz.) can cream of chicken soup
1 (8 oz.) container sour cream
1 T. poppy seeds
1 tsp. dried dill weed
4 C. cooked, cubed chicken meat
1/2 C. butter, melted
1 1/2 C. crushed buttery round crackers (Ritz-type)
Combine water and rice in a saucepan and bring to a boil. Reduce heat, cover and
simmer for 20 minutes.
Preheat oven to 350º F.Lightly grease a 9 X 13 pan.
In a large bowl, mix soup, sour cream, poppy seeds, and dill. Stir in the
chicken and cooked rice. Spread the mixture into the prepared baking pan. In a
small bowl, mix the cracker crumbs and butter and sprinkle over the casserole.
Bake 30 minutes. Let cool 5 minutes before serving.
