Seafood Casserole Supreme

2 cups chopped onion
3 cups chopped celery
3 tablespoons butter
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup butter
1/2 cup flour
4 cups milk
1/2 pound cheese
10 ounces lobster
1/2 pound crabmeat
1/2 pound cooked shrimp
1/2 pound cooked scallops
1/2 pound cooked haddock fillets

Sauté onion and celery in 3 tablespoons butter, add salt and pepper. Melt 1/2 cup butter in saucepan over low heat, blend in flour, stir over low heat until mixture is smooth and bubbly. Remove from heat, stir in milk, heat to boiling, add onion and celery, then cheese. Cook until cheese is melted, add seafood and place in large casserole. Bake 325°F for 20-30 minutes - do not over bake.
