Sherried Chicken and Rice Recipe

Sherried Chicken and Rice

1 cup long-grain rice
1 chicken -- cut up
1/4 cup sherry
1 envelope dry onion soup mix
3/4 cup orange juice
1 can cream of mushroom soup

Butter a large baking dish. Spread rice in dish. Arrange chicken skin side up on rice and pour mixture of mushroom soup, sherry and orange juice over chicken. Sprinkle onion soup on top. Cover with foil tightly. Bake 2 hours at 325F. Uncover and bake for 15-30 minutes until rice is dry and chicken browned
