Tortilla Beef Bake
Ingredients:
1/2 lb. ground beef
1/2 Cup chopped onion
1 (14 1/2 oz.) can stewed tomatoes
1/2 Cup enchilada sauce
1 tsp. ground cumin
1/4 tsp. pepper
6 (6-inch) tortillas
1 (3 oz.) pkg. cream cheese
1 (4 oz.) can diced chilies
1/2 Cup shredded Monterey Jack cheese
Method:
Warm the tortillas before folding to prevent them from cracking. In a skillet,
cook the ground beef and onion until the meat is brown and then drain. Stir in
tomatoes, enchilada sauce, cumin, salt and pepper. Bring to boiling and reduce
the heat. Cover and simmer 5 minutes.
Pour half of sauce into 12 x 7 1/2 x 2-inch baking dish. Wrap stack of tortillas
in foil and warm in a 350 degrees oven for 8 to 10 minutes. Spread the warm
tortillas with cream cheese and top with chilies.
Fold tortillas in half. Arrange over the meat sauce in dish. Pour remaining
sauce over tortillas. Cover and bake in a 350 degree oven for 15 minutes.
Uncover and sprinkle cheese over the top. Bake 5 minutes more or until cheese
melts.
