Mile High Cheesecake

Crust:
1 1/2 c. graham cracker crumbs
6 Tbsp. butter
1/8 tsp. vanilla
2 Tbsp. sugar
Rub all ingredients together with fingers until blended.
In 10-inch spring-form pan, pat crust onto the bottom and bring the edges up as
far as possible.
Filling:
1 lb. cream cheese
1 c. sugar
6 egg yolks
6 egg whites
1 pt. sour cream
3 tsp. lemon juice
1 tsp. vanilla
3 scant Tbsp. flour
Cream together cream cheese and sugar. Stir in egg
yolks, sour cream, lemon juice and vanilla. Add flour and stir until just
blended. Whip egg whites until they hold a peak and fold in thoroughly. Pour
into crust. Bake at 350 degrees for 1 hour.
Shut off heat and leave in oven with door closed 1 hour longer. Open door and
let cake remaining in oven 15 minutes longer.
Cool thoroughly.
Topping: Your choice.
