Blasted Chicken Recipe

Blasted Chicken

3.5 lb whole chicken
Salt to taste
Pepper to taste   (you may also add any other spices you like)
Large onion optional

Preheat the oven to 450o
Rinse chicken and pat dry
Season with salt and pepper and any other seasonings you prefer
Place onion in cavity of chicken if using
Place on a roasting pan breast side up
Roast for 45 min or until the juices run clear when the thigh is pricked with a skewer
Place chicken on a cutting board and let stand for 15 min.
