Pan-Fried Chicken Strips

This dish is a snap to prepare and delicious. Prepare everything ahead of time,
and throw it together at the last minute while your guests or family are
finishing their sherry.
Ingredients:
2 tablespoons olive oil
2 pounds chicken breasts, skinned, boned, and cut into 1/2-inch-wide strips
2 cloves garlic, crushed
6 green onions, chopped
4 tablespoons Marsala wine
2 tablespoons lemon juice
Salt and pepper to taste
Directions:
Heat a large frying pan. Add the oil, chicken strips, garlic, and green onions.
Saute over high heat until the chicken is lightly browned and tender. Remove
from the pan.
Add the Marsala and lemon juice, and allow the liquid to reduce for a moment.
Return the chicken to the hot pan, and add salt and pepper. Do not overcook this
dish. Serve immediately.
Serves:4 to 6
