1 broiler, split in half
1/4 lb butter, melted
2 Tbs chopped parsley
2 green onions, chopped fine
1/2 cup mushrooms, chopped fine
1/2 clove garlic, grated
salt and pepper
fresh, soft bread crumbs
Place broiler halves in skillet with butter. Add parsley. onions, mushrooms and
garlic. Cover and simmer slowly, turning occasionally until done. remove,
season, roll in the bread crumbs, return to the skillet, and broil until the
chicken and crumbs have browned.
Serve with rice and pour the reaming butter and mushrooms from the pan over the
rice and chicken.
