Bishop's Bread
Ingredients:
3 Eggs
1/2 Cup Sugar
1 Teaspoon Vanilla
1 1/2 Cups Flour
1 Teaspoon Salt
1 Package Semi-Sweet Chocolate Chips ( 6oz )
1 Cup Dates
1 Cup Nuts
1 Cup Whole Candied Cherries
1/2 Cup mixed Candied Fruit
3 Tablespoons Brandy
Method:
Preheat oven to 325 Degrees
In a small bowl, beat eggs for five minutes. Gradually add the sugar and
vanilla. In a larger bowl, combine flour and salt. Mix in chocolate, dates,
cherries and fruit. Fold in egg mixture and spread in a greased and floured 9 x
5x 3 inch loaf pan. Bake for 1 hour.
Cool for 10 minutes and invert. Poke holes and pour brandy over . Wrap tightly
in foil and store at room temperature overnight.
I use slightly more brandy than the recipe calls for but make sure not to let
the bread get soggy. Also I find it tastes best after about 3 days of sitting.
