Spiked Chocolate Covered Apricots
Ingredients:
1/2 Cup Brandy
1/2 Cup Sugar
1/2 Cup Vodka
Dried Apricots
Semi-Sweet or Bittersweet Chocolate
Method:
In a quart jar, pour the brandy, sugar and vodka. Stir until sugar is dissolved.
Pack in dried apricots, as many as will fit. Let soak for 4-6 weeks, turning
once a week. Dry off on paper towels, then dip in melted chocolate. Chill on
cookie sheet until chocolate hardens.
Store in airtight container.
