Dutch Sponge Cookies
4 egg yolks
2 cups sifted confectioners' sugar
2 cups sifted flour
1/8 teaspoon ground cloves
1 teaspoon cinnamon Confectioners' sugar
Preheat the oven to 325º. Lightly grease baking sheets with butter or
shortening. In a large mixing bowl, beat egg yolks until foamy and thick.
Beat in sugar, 1/4 cup at a time. Continue to beat until batter is light and
very thick. Sift flour with cloves and cinnamon, then sift the mixture once
more. Gently fold into batter. do not beat. Drop rounded teaspoonfuls of
batter onto the baking sheets, about 2" apart. Bake for 15 minutes, or until
cookies are golden brown and firm to the touch. Remove from oven. after the
cookies have cooled for 2-3 minutes, but are still warm to the touch, use a
spatula to transfer them to wire racks to cool completely. When the cookies
are cool, dust them with confectioners' sugar.
