Jim Beam Cookies
Ingredients:
8 ounces margarine -- melted (2 sticks)
1 1/2 cups brown sugar
3 eggs -- slightly beaten
2 1/2 cups flour
1/2 cup whiskey
1 teaspoon baking soda
4 cups pecans -- chopped
4 cups raisins
Method:
Mix margarine and sugar. Add eggs and beat well. Dissolve soda in whiskey and
add to mixture. Stir in flour, nuts, raisins. It will be very thick and very
sticky. (Be careful--I burned up the motor on a hand held mixer doing this.
However, I have no trouble with my counter top Kitchen aid). Drop by spoons full
on ungreased cookie sheet. Don't make them too big. Bake at 375 degrees for 8
min.
