Molasses Spice Spritz Cookies
Ingredients
1/4 c. shortening
1/4 c. butter
1/2 c. sugar
1 egg
1/4 tsp. baking soda
1/4 c. molasses
1 1/2 c. + 2 Tb. flour
1/4 tsp. salt
1/4 tsp. ground allspice
1/4 tsp. ground cloves
1/4 tsp. ground mace
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
Directions
Preheat oven to 375 degrees. Cream the butter on high speed, three to five
minutes. Add sugar gradually, then egg, continuing to beat on high speed. Scrape
sides and beat another five or ten seconds to combine thoroughly. Add baking
soda to molasses, and add to creamed butter. Sift flour with salt and spices,
and slowly add to creamed butter on low speed. Scrape sides and bottom, and mix
until combined. If dough is particularly soft, chill for half an hour; do not
chill overnight or the cookies will be flat. Fill a cookie press and form
cookies onto an ungreased cookie sheet. Bake 10 minutes for soft cookies, 12
minutes for crisp.
Store in an air-tight container. These cookies will pick up moisture from the
air; on a damp day it takes only six hours to turn crisp cookies into soft
cookies.
