Swedish Lace Sandwich Cookies

Luscious coffee flavored butter-cream sandwiched between two crisp and lacy
wafers.
1/2 cup margarine or butter
2/3 cup sugar
1/4 cup light corn syrup
2 tablespoons water
3/4cup oat bran (not cereal)
1/2 cup all-purpose flour
1/2 teaspoon ground cardamom
1/4teaspoon ground ginger
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon vanilla
Coffee-Butter Cream Frosting (Recipe follows)
Line cookie sheets with foil. Lightly spray with nonstick spray coating. Set
aside.
In a saucepan melt margarine or butter over medium heat. Stir in sugar,
syrup, and water till sugar is dissolved. Remove from heat.
In a bowl stir together the oat bran, flour, cardamom, ginger,
baking powder, and baking soda. Add to syrup mixture with
vanilla. Stir till thoroughly combined. Let stand 10 minutes.
Drop dough by level teaspoons about 2 1/2 inches apart on the
prepared cookie sheets. Bake in 375º oven for 5 to 7 minutes or
till lightly browned. Cool on cookie sheets for 1 to 2 minutes. Remove and
cool on wire racks.
To assemble, frost bottoms of half of the cookies with Coffee-Butter Cream
Frosting. Then top each with the remaining unfrosted cookies bottom
sides down. Makes about 40.
Coffee-Butter Cream Frosting: In a mixing bowl beat 1/4 cup margarine or butter
with an electric mixer on medium to high speed about 30 seconds or till
softened. Gradually beat in 2 cups sifted powdered sugar. Beat in 2 tablespoons
milk and 2 tablespoons coffee-flavored liqueur till smooth. Gradually beat in
enough additional powdered sugar (about 1 1/4 cups) to make frosting of
spreading consistency.
