Yugoslavian Christmas Cookies  Recipe


Yugoslavian Christmas Cookies       


Crust:
1 c. Margarine
1/2 c. sugar
1 egg yolk
1/4 tsp. salt
2 c. flour

Topping:
1 c. currant jelly
4 egg whites
1 c. sugar
1 c. chopped nuts
1 Tbsp. lemon juice

Work crust ingredients together as for pie dough. Pat into 9 x 13-inch cookie sheet. Bake 10 minutes at 350 degrees.

Topping:
Beat 1 cup currant jelly and spread over dough. Whip 4 egg whites until stiff. Add 1 cup sugar to egg
whites and beat. Fold in chopped nuts and lemon juice. Swirl over jelly and sprinkle with coarsely chopped nuts. Bake 25 to 35 minutes at 350 degrees. Cool and cut into squares.
