Easy Christmas Ice Cream
Here are some easy ways to dress up commercial ice cream. These may be used in
several variations.
I remember my Mother doing this when I was a child. We didn't have all the
flavored ice creams that
they have now so my Mom would take out a marble slab and go to work mixing
different flavors into the vanilla ice cream. Here are a few that I found in her
stack of recipes.
Plum Pudding Ice Cream
Blend 1 quart vanilla ice cream with 1/2 cup diced candied pineapple, 1/4 cup
candied green cherries, 1/4 cup candied red cherries, 1/2 cup blanched almonds,
1/2 cup macaroon crumbs, and 2 tablespoons of brandy or sherry. Place in freezer
until the ice cream hardens.
Serves 8
Easy Eggnog Ice Cream
Add either 1/4 cup sherry , 1/4 cup rum or 1/4 cup brandy to each quart of
vanilla ice cream, mix, and freeze until hardened.
One quart serves 8
Peppermint Stick Ice Cream
Crush 1/4 pound peppermint stick candy, mix with 1 quart vanilla ice cream, and
freeze until hardened. If a more pronounced flavor of peppermint is desired, add
a few drops of peppermint extract.
Serves 8
Nesselrode Ice Cream
Boil one pound chestnuts until tender, removing the shell and skins, and running
the nut meats through a processor. Cool the puree and add it to 1 quart vanilla
ice cream, 1 cup drained crushed pineapple,1 cup mixed candied fruit, and 1/4
cup brandy or sherry. Blend thoroughly. Place ice cream in a mold and freeze
until hard.
Serves 8
Pumpkin Nut Ice Cream
Combine 1 quart vanilla ice cream with 1 and 1/2 cups cooked pumpkin, 2
tablespoons rum, 1/2 cup chopped nuts, 1/2 teaspoon cinnamon, and 1/2 teaspoons
ginger. Mix well and put into the freezer to harden.
Serves 8
Mincemeat Ice Cream
Combine 1 quart vanilla ice cream with 1 and 1/2 cups mincemeat, 1/2 cup chopped
nuts, 2 tablespoons brandy. Mix well and put into the freezer to harden.
