Pecan Cookies In A Jar
1/2 c sugar
1/2 c firmly packed brown sugar
3/4 c finely chopped pecans
1 c crisp rice cereal
3/4 c flour mixed with 1/2 t baking soda and 1/2 t baking powder
(Makes 3 1/2 cups)
Layer ingredients, in order given, in a 1 quart wide mouth canning jar. Press
each layer firmly in place before adding the next ingredient.
Include the following recipe:
Empty contents of the jar into a large mixing bowl. Use your hands to thoroughly
mix. Add: 1 stick soft butter, 1 egg slightly beaten and 1 teaspoon of vanilla.
Mix until ingredients are completely blended. You will need to finish mixing
with your hands. Shape the dough into balls the size of walnuts. Place 2" apart
on sprayed cookies sheets. Bake at 350° for 10-12 minutes, until the edges are
lightly browned. Cool for 5 minutes on a baking sheet. Remove the cookies to
racks and allow to cool completely.
