Christmas Eggnog Loaf
1 cup eggnog ( Fresh in the carton )
2 teaspoons rum extract
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 cup white sugar
1/2 cup butter or margarine
1 teaspoon vanilla extract
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
Preheat oven to 350 degrees. Grease the bottom only of 9x5 inch loaf pan.
Beat the eggs in large bowl and add the sugar, eggnog, butter, rum extract and
vanilla, blend well.
Spoon flour into a measuring cup and level it off. Add the flour, baking powder,
salt and nutmeg, stirring just until dry ingredients are moistened.
Pour into greased pan. Bake for 40 minutes to 1hour or until tooth pick inserted
in center comes out clean. Cool for about 10 minutes before you remove from pan.
Cool completely and wrap tightly. Store in the refrigerator.
Makes 1 loaf
