Persimmon Bars with Lemon Glaze Recipe


Persimmon Bars with Lemon Glaze            

1 Cup persimmon pulp
1 Tsp. soda
1 Egg
1/2 Cup oil
1 3/4 Cup flour
1 Tsp. salt
1 Tsp. cinnamon
1 Tsp. nutmeg
1 Tsp. cloves
1 Cup chopped walnuts or pecans
1 1/2 Tsp. lemon juice
1 Cup sugar
1 Cup pitted dates

Lemon Glaze:

1 Cup powdered sugar
2 Tbsp. lemon juice
Blend all glaze ingredients until smooth.

Mix persimmon pulp with lemon juice and soda. Lightly beat an egg and stir in sugar, oil and dates. Combine flour with spices and salt. Add to persimmon pulp and date mixture alternating until well blended. Stir in nuts. Spread evenly in a greased and floured 9 x 13-inch pan. Bake in a 350 degree oven for 25 minutes or until lightly browned. Cool 5 minutes. Spread with lemon glaze. Cool thoroughly and cut into bars.
