Wassail
Ingredients:
2 oranges
24 whole cloves
1 cinnamon stick
3 whole allspice berries
3 whole cardamom pods
3 whole cloves
1/8 whole nutmeg or 1/4 tsp grated nutmeg
2 litters ginger ail
1 Bottle cream sherry 750ml
1 cup brandy
1 cup milk (optional)
Method:
Slice the oranges and stud the peels with 24 cloves and set aside. Break up
cinnamon stick and lightly crush the allspice berries and cardamom pods with
back of a spoon. Wrap cinnamon, allspice, cardamom, cloves and nutmeg in several
thicknesses of cheesecloth and tie into a little bag. Put spice bag in a large
teflon coated saucepan with 2 cups ginger ale. Heat to boiling, reduce heat and
simmer 10 minutes. Remove and discard spice bag. Add the remaining ginger ale,
sherry and brandy to the pot and heat until mixture is steaming hot, but do not
boil. Whisk in milk if desired and pour into punch bowl. Garnish with the clove
studded orange slices.
