WW: Crepes w/Orange Crème (4.5 points)

1 cup plain flour
1/2 tbs sugar
4 eggs
1 tbs olive oil
1 1/2 cups skim milk
Orange Cream:
1 1/2 cups skim milk
2 tsp grated orange rind
2 eggs
1 tbs custard powder
2 tbs caster sugar
1 tbs Grand Marnier
Grand Marnier Sauce:
1 cup orange juice
1 orange, peeled, pith removed, sliced
1 1/2 tsp corn flour
1 1 /2 tsp water
1/4 cup Grand Marnier
1. Sift the flour and sugar into a bowl, gradually stir in the combined eggs,
oil and milk. Beat until smooth. Stand for 30 minutes.
2. Spray a frying pan with cooking spray, heat and add 2 tbs batter at a time to
make 18 crepes. Cook until lightly browned underneath, turn, brown other side.
3. To serve, place 2 tsp orange crème into centre of each crepe and fold over.
Pour over Grand Marnier Sauce.
Orange Crème:
Bring 1 cup of the milk and rind to almost boiling point. Remove from the heat
and beat in the combined remaining ingredients. Return to the heat and stir
until mixture boils and thickens. Cool.
Grand Marnier Sauce:
Combine the orange juice, orange segments and combined corn flour and water in a
pan. Heat and stir until mixture boils and thickens. Remove from heat and stir
in the Grand Marnier.
