Weight Watchers Marvelous Mashed

3 1/2 lbs. white potatoes, peeled & quartered
1 cup non-fat sour cream
1 cup skim milk
Salt and pepper to taste
Boil the potatoes in water until tender. Drain. Add sour cream, milk, salt and
pepper. Beat to desired consistency. Add more sour cream and milk as needed.
Variations: While beating, add one of these seasonings (increase as desired):
- 5 roasted, peeled garlic cloves
- 1 Tbsp. prepared horseradish
- 1/4 cup chopped green onions
- 4.5-oz. can mild peeled and chopped green chilies, drained
Yield: Makes 6-8 servings.
