San Carlos Beef Ball Soup

They say in his more peaceful moments Geronimo was a fair hand over the cook fire.
This recipes is said to have been brought to its present state of refinement while
he was confined for a strecth at the San Carlos Indian Reservation. It reportedly
thence found its way into the hands of Al Sieber, George Crook's Chief of Scouts.
Al, in turn, passed it along, and our provider said he found it crumpled up on the
floor of the Kentucky Bar years ago along Prescott's renowned Whickey Row.
If you dig meat balls, you'll fall out of your saddle for this one.
1 lb. GROUND BEEF
1 Onion, diced
1 tsp. CHILI POWDER
1/4 cup seasoned CROUTONS
1 clove GARLIC, diced
2 cans (10 oz. ea.) CHICKEN BROTH
2 cans (14 1/2 oz. ea.) STEWED TOMATOES
1/4 tsp. OREGANO
3 stalks CELERY, diced
2 cups peeled, cubed POTATOES
Combine, beef, onion, chili powder, egg, croutons, garlic; add salt and pepper to taste.
Shape into one-inch balls. Saute for 10 minutes, drain fat and place meat balls in crock pot.
Add broth, tomatoes, oregano, celery and potatoes.
Set on high and cook one hour.
Reduce to medium and cook additional four to five hours.
Adjust seasonings to suit personal taste.
Serves four to six.
