Boot Kickin Caviar
Makes 7 cups
One 14 oz. can black eyed peas, drained and rinsed
One 15.5 oz. can white hominy, drained and rinsed
2 medium tomatoes, seeded and chopped
4 green onions, very thinly sliced
2 garlic cloves, minced
1 med. green pepper, finely chopped
1/2 cup chopped onion
1/4 - 1/3 cup chopped fresh cilantro or parsley, as desired
1 cup bottled salsa
Combine all ingredients and mix lightly. Cover and chill at least
2 hours or up to 24 hours, stirring occasionally. Drain before
serving. Serve with tortilla chips, or as a salad side dish. |
