Wild West Cheeseburgers

1 cup sliced mushrooms
1 tablespoon butter
1 pound lean ground beef
4 slices Colby cheese
4 slices Muenster cheese
4 lettuce leaves
4 slices tomato
8 deep-fried battered onion rings
Cook mushrooms in butter in a small skillet over medium to low heat just until tender, about 3 to 5 minutes;
set aside. Shape ground beef into four 1/2-inch thick patties.
Place patties on grid over medium coals.
Grill 10 to 12 minutes for medium or to desired doneness, turning once and topping with a slice each of Colby and
Muenster cheese the last 2-3 minutes of grilling.
To serve, arrange lettuce on bread slice; top with burger, tomato slice, reserved mushrooms and onion rings.
Note: I've also made this using the french fried onion rings that come in a can.
Gives it a different crunch but with great onion flavor.
