Yield: 6 servings
1 pound lean ground beef or ground turkey
1 1 ounce package Rosarita® Taco Seasoning Mix
2 10 fluid ounce cans Ro*Tel® Diced Tomatoes in Sauce, divided
1/2 cup water
12 taco shells, warmed
3 cups shredded lettuce
1 1/2 cup shredded County Line® Cheddar cheese, (6 ounces)
Cook meat in a large skillet over medium-high heat until crumbled and no longer pink; drain.
Add seasoning mix, 1 can tomatoes, and water.
Bring to a boil; reduce heat and cook, uncovered, 8 minutes, stirring occasionally.
Fill each taco shell with equal amounts of meat mixture, shredded lettuce, and cheese.
Garnish with remaining 1 can of tomatoes.
