1/2 cup chopped red bell pepper
4 tablespoons ground cumin
1/4 cup bottled mango vinaigrette
1 cup sour cream
1 cup cooked or canned black beans
2 tablespoons cilantro, chopped
1 package Carr's® Table Water® Crackers with Cracked Pepper
Cilantro leaves for garnish
Mix beans, corn, red pepper, green onion, cilantro, 2 teaspoons cumin.
Stir in mango vinaigrette to complete the black bean salsa.
Cover and chill for 1 hour.
Combine sour cream and 2 teaspoons ground cumin, spread on Carr's® Table Water® Crackers with Cracked Pepper.
Top with black bean salsa; garnish with cilantro.
