Raspberry-Walnut Linzer Bars

1 1/2 cups butter, softened
1 cup icing sugar
1/4 tsp. salt
1/2 tsp. cinnamon
2 3/4 cups flour
1 1/2 cups finely chopped walnuts or pecans
2 cups raspberry jam
1 Tbsp. lemon juice
icing sugar to sprinkle
Cream butter, sugar, egg, salt and cinnamon until fluffy. Fold in flour and
nuts. Chill dough one hour or until stiff enough to handle. Set aside 1/3 of
dough. Pat remaining 2/3 of dough into a 10" x 15" edged cookie sheet. Stir
together jam and lemon juice. Spread evenly over pastry. On a floured surface,
pat or roll out remaining dough into a rectangle. Cut into strips 1/4" wide.
Place strips on top of jam in a lattice pattern. Don't worry if dough breaks
when you are making the pattern - just pinch it together and it'll bake into one
piece. Bake at 375 degrees .F for 35 to 40 minutes, until pastry is lightly
browned. Cool. Sprinkle with icing sugar and cut into bars.
