Apricot Ginger Biscotti Recipe


Apricot Ginger Biscotti

Ingredients:
2 eggs
1/2 C. sugar
1 1/3 C. flour
1/4 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/2 tsp. vanilla
1/3 C. dried apricots, chopped
3 T. crystallized ginger, chopped

Directions:
Preheat oven to 325 degrees F.
Combine eggs and sugar in a small mixing bowl and set aside. Blend flour, baking soda, baking powder, and salt. Add egg mixture and vanilla. Mix in apricots and ginger. With floured hands, form dough into
a 6 1/2 X 4 1/2 inch rectangle. Place on cookie sheet and bake 30 minutes. Take out and slice diagonally. Lay the cut biscotti on the baking sheet on their flat side and rebake for 10 minutes more. Remove and let cool.

Makes 12 servings.
