Candy Cane Chocolate Chip Biscotti

Ingredients:
1 1/3 cups sugar
1 stick unsalted butter, softened
3 eggs
1 cup whole wheat flour
2 cups unbleached flour
1 tsp baking powder
1/4 tsp salt
1/2 cup crushed candy canes
1 cup chocolate chips
Directions:
Preheat oven to 350 degrees. Line baking sheet with parchment paper or silicone
baking liner. (I use the Tupperware "wonder mat")
In a large bowl, blend the sugar, butter and eggs until well mixed.
In another bowl, combine flours, baking powder and salt.
Add flour mixture along with candy and chocolate chips. Mix until blended.
Form dough into 2 logs on prepared pan approximately 10" x 2".
Bake 30 - 35 minutes until golden brown. Remove from oven and cool for 15
minutes. Lower oven temperature to 300 degrees.
Using a serrated knife, cut into 1/2 inch slices. Place upright on the pan,
leaving a little air space between slices.
Bake for 20 - 30 minutes, should look dry and golden brown. Remove biscotti to
wire rack to cool completely. Will crunch up as it cools.

This recipe was adapted from a Betty Crocker recipe. These festive biscotti are
perfect for the holidays.
