Easy Double Almond Biscotti

Ingredients:
1 tube almond paste (7 oz.)
1 stick very cold butter
1- 3/4 cups all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1 cup slivered almonds
4 egg whites (large eggs)
1/2 tsp. almond extract
 

Directions:
Preheat oven to 350F. Grate cold almond paste and cold butter into medium bowl. Add flour, sugar, baking powder & salt. Mix together well with fork until crumbly. Add slivered almonds.

Whisk egg whites and extract until frothy. Add to mixture. Mix with large spoon until dough holds together.

Turn out onto a floured counter. Roll dough into a 2" thick log. Cut in half and roll each piece 10" long. Flatten each to 3/4" thick.

Bake 35 minutes until golden. Cool pan on wire rack for 10 minutes. Cut into 3/4" diagonal slices and return to cookie sheet. Bake 12-15 minutes more.

Cool and store in airtight container. I always double this recipe and they freeze great!
