Snickerdoodle Biscotti Recipe


Snickerdoodle Biscotti ( Tried & True )

Ingredients:
2 3/4 cups all purpose flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons vegetable oil
2 teaspoons vanilla extract
3 large eggs
1/4 cup (1/2 stick) unsalted butter, softened
1/4 teaspoon ground cinnamon.

2 - 3 tablespoons milk
1 teaspoon ground cinnamon
2 tablespoons sugar

Cinnamon Cream Cheese Drizzle, recipe follows:
 

Directions:
Preheat oven to 350° F.

Lightly spoon flour into dry measuring cups and level with a knife. Combine flour, sugar,
baking powder, salt and 1/4 teaspoon cinnamon in a bowl. In the bowl of an electric mixer,
cream the softened butter, oil, vanilla and eggs. Add flour mixture to egg mixture, mixing
on a low speed until well blended (dough will be crumbly and slightly moist. It will hold
together when squeezed). Turn out onto a lightly floured surface and knead lightly 7 to 8
times. Divide dough in half. Shape each portion into an 8-inch long roll. Place rolls
6-inches apart on a lightly greased baking sheet and flatten each roll to a 1-inch thickness.
Combine the 2 tablespoons sugar and 1 teaspoon cinnamon. Brush each log with milk and
sprinkle with the cinnamon-sugar mixture.

Bake at 350°F. for 30 minutes. Remove rolls from baking sheet to a wire rack and cool 10
minutes. Meanwhile, reduce the oven temperature to 325°F.

Cut each roll into 1/2-inch slices (about 15 per roll). Place the slices upright on a baking
sheet and return to the oven and bake an additional 15 to 20 minutes. Cookies will still be
slightly soft in the center, but will harden as they cool. Remove from baking sheet and
cool completely on a wire rack.

Mix ingredients for Cinnamon Cream Cheese Drizzle, and lightly brush, drizzle or spread
over completely cool cookies. Let drizzle set up and dry before storing.

Cinnamon Cream Cheese Drizzle:
3 oz. package cream cheese, softened
3/4 cup confectioners sugar
1/4 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
2 to 3 tablespoons milk (or more if needed)

Whisk softened cream cheese and confectioners sugar together. Add vanilla, cinnamon and
milk and whisk until a good consistency for drizzling.
