Citrus Ginger Cookies
1 cup Butter Flavor Crisco
1 -1/2 cups granulated sugar
1 large egg
2 tablespoons light corn syrup
1 teaspoon vanilla
3 cups all-purpose flour
3 teaspoons ground ginger
2 teaspoons baking soda
1/2 teaspoon fresh grated orange peel
1/2 teaspoon fresh grated lemon peel
1/2 teaspoon fresh grated lime peel
Combine shortening and sugar in large bowl. Beat at medium speed with electric
mixer until well blended. Beat in egg, corn syrup and vanilla until well
Combine flour, ginger and baking soda in small bowl. Add to creamed mixture. Add
orange lemon and lime peel until well blended.
Shape dough into two rolls about 2 inches in diameter. Wrap tightly in plastic
wrap; refrigerate 3 hours or overnight.
Heat oven to 350ºF.
Slice dough about 1/8 inch thick. Place 2 inches apart on ungreased cookie
Bake at 350ºF for 6 to 8 minutes or until lightly brown.
Cool on cookie sheets 4 minutes; transfer to cooling racks.
Yield: about 7 dozen cookies
