Mouse Cookies

Ingredients:
1 cup butter, softened
1 teaspoon vanilla extract
1/2 cup confectioner's sugar plus more for dusting
2 cups flour
1 cup finely ground pecans
1/4 cup salt
1 (3-ounce) can rice noodles or chow mien noodles
Sliced almonds
Mini chocolate chips
Directions:
In a large bowl of an electric mixer, beat butter and vanilla until light and
fluffy, about 1 minute. Add sugar; beat until combined. Mix in flour, pecans and
salt.
Shape dough into 1-inch ovals, tapering one end into a point. Place about 10
cookies on baking sheet and bake in a preheated 350-degree oven for 12 minutes.
Remove sheet from oven; insert noodle at tail end and 2 almond slices about 1/3
of the way from the pointed end for the ears. Return to oven; bake until
slightly browned, about 12 minutes.
Remove from oven and quickly place two chocolate chips in front of ears for the
eyes (chocolate will melt slightly and stick to cookie.) Dust mice bodies with
confectioner's sugar. Cool on wire rack. Repeat with remaining dough.
