Slice and Bake Oatmeal Cookies
I love these refrigerator cookies because I can make the dough freeze it or
refrigerate and then my son can bake them anytime he and his friends want
cookies. Works out great for both of us!
1 cup crisco ( I use butter flavor )
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups sifted flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1-1/2 cups quick-cooking rolled oats
1/2 cup finely chopped walnuts
In mixing bowl, cream together Crisco, granulated sugar, and brown sugar till
light and fluffy.
Add eggs, one at a time, beating well after each; add vanilla.
Combine the flour, baking soda, salt, and cinnamon; stir into creamed mixture.
Stir in oats and walnuts. Shape dough into two 8-inch rolls.
Wrap in waxed paper or clear plastic wrap. Chill thoroughly, about 3 hours.
Preheat oven to 350ºF.
Cut dough into 1/4-inch slices.
Place on greased cookie sheet.
Bake at 350ºF for 8 to 10 minutes. Cool on rack.
