Nutty Chocolate Mint Bombe

Ingredients:
1-1/2 cups cookie crumbs (chocolate sandwich-style or oatmeal)
3 Tbs. melted butter
4 cups chunky chocolate-chip ice cream, softened
3 Tbs. creme de menthe
1 cup dry-roasted peanuts, lightly crushed
Cooking spray
Plastic wrap
Chocolate chips
Directions:
In a medium bowl, combine crushed cookie crumbs with melted butter. Spray deep
round bowl with cooking spray and line with plastic wrap. Spray plastic wrap
with cooking spray and then firmly press crumb mixture into bowl. In another
bowl, combine softened chunky chocolate-chip ice cream, creme de menthe and
lightly crushed dry-roasted peanuts. Mix thoroughly. Spoon ice-cream mixture
into bowl with cookie crumbs. Cover with plastic wrap and freeze at least 8
hours.
When ice cream has hardened, hold bowl right side up and place a chilled flat
platter on top. Turn platter and bowl upside down and place on a tabletop.
Slowly remove bowl by pulling gently at plastic wrap. When bombe has been
removed from the bowl, gently remove plastic wrap. To serve, cut into wedges and
serve on bed of chocolate chips.
