Dark Chocolate Ice Cream
dark chocolate ice cream recipe
4 ounces unsweetened chocolate
2 eggs
1 c. milk
1 c. sugar
1 c. heavy cream
1 tsp. vanilla extract
1 pinch salt
Melt the chocolate in a double boiler over hot, but not boiling, water.
Gradually whisk in the milk and stir until smooth.
Remove from the heat and let it cool.
Whisk the egg until light and fluffy.
Gradually whisk in the sugar. Continue to whisk for 1 minute, until the sugar is
completely blended.
Add the cream, vanilla, and salt and whisk together.
Add the cooled chocolate mixture and blend well.
Cover. Chill, and freeze according to ice cream maker's directions.
Makes 1 1/2 quarts.
