Papaya Ice Cream
1 Ripe papaya; peeled, seeded sliced ( Hawaiian is best )
1 tbs Lemon juice
3/4 c Sugar
2 Eggs; beaten
1 c Milk
1 c Half & half; or whip. cream
In blender or food processor fitted with metal blade, puree papaya and lemon
juice. In a medium saucepan, combine sugar, beaten eggs and milk. Cook and stir
over low heat until mixture thickens and coats a spoon. Add pureed papaya and
half and half. Pour into ice cream canister. Freeze in ice cream maker according
to manufacturer's directions.
Makes 1quart.
