Peach Schnapps Ice Cream

Yield: 1 Quart
2 Ripe peaches; peeled and.. diced
2 tbs Peach schnapps
1 1/2 c Heavy cream
1/2 c Sugar
Combine peaches and schnapps, mashing a bit. Set aside.
Cook 1/2 cup cream and sugar over low heat until the sugar is melted. Remove
from heat and pour over peaches along with the remaining cream. Refrigerate
until well chilled.
Freeze in an ice cream maker according to manufacturer.
Note: Apricot or raspberry liqueur or amaretto could be substituted in the this
recipe.
