Pistachio Nut Ice Cream Recipe

Pistachio Nut Ice Cream

Yield: 1 Quart

2 c Half-and-half
1 c Milk
4 oz Egg beaters or egg substitute
2/3 c Sugar
2 ts Vanilla extract
1/8 ts Almond extract
1 dash Salt
1 Or 2 drops green food
-coloring - Optional
1/2 c Coarsely chopped roasted un-salted pistachio nuts
Combine ingredients except pistachios in a blender or food
processor and process until well combined. Cover and chill in the
refrigerator until ready to freeze. Blend for a few seconds before
pouring into the ice cream maker. Follow the manufacturer's
instructions for freezing. About a minute before ice cream is
finished, add nuts and finish freezing.
