Bourbon Pineapple Flambe Sundae
Ingredients:
2 Tbs. unsalted butter
1/4 cup plus 2 Tbs. dark brown sugar, firmly packed
1/4 tsp. ground cloves
3 cups pineapple chunks
1/4 cup bourbon (optional)
2 cups vanilla ice cream
Method:
Melt butter in a heavy saucepan over medium heat. Stir in sugar and cloves. Cook
until sugar dissolves, stirring constantly. Add pineapple and cook 3-5 minutes
or until pineapple is heated throughout and sauce thickens slightly. Remove from
heat. Set aside 2 minutes before adding bourbon. Return saucepan to heat, if
adding bourbon, and cook until sauce thickens. Serve pineapple and sauce over
ice cream.
