No Ignite Peaches Pecan Foster

1/2 cup cranberry juice cocktail
1/4 cup packed brown sugar
4 medium peaches, peeled and pitted, thickly sliced
2 tablespoons butter or margarine
1/4 cup chopped pecans
1/4 teaspoon ground cinnamon
2 cups Healthy Choice® light or regular vanilla ice cream
Reddi-wip® Original Whipped Light Cream
In a large saucepan, heat cranberry juice cocktail, and brown sugar to boiling;
add peaches. Return to boiling. Reduce heat; cover and simmer 3-5 minutes, or
until peaches are tender.
Remove from heat, stir in pecans, butter, and cinnamon. Cool slightly, about 5
Serve over ice cream and top with whipped cream.
This may be served over angel food or pound cake. Even better - serve over pound
cake topped with ice cream!
Yield: 4 servings
