Black Forest Bread Pudding

Prep: 15 minutes Bake: 30 minutes Cook: 4 minutes
Ingredients
6 cups Italian bread cubes
3/4 cup dried cherries
2-1/2 cups low-fat milk
1/2 cup granulated sugar
8 ounces semisweet chocolate, chopped
3 eggs
1 egg white
Instructions:
1. Mix bread and cherries in bowl. Bring milk and sugar in saucepan to boiling.
Stir in chocolate until almost melted. Remove from heat; stir until smooth. Cool
to room temperature.
2. Whisk eggs and white in small bowl. Add to chocolate. Pour over bread. Cover;
let stand 30 minutes.
3. Butter 11 x 7 x 2-inch baking pan. Pour bread mixture into pan. Cover tightly
with buttered aluminum foil.
4. Bake in preheated 325 degrees F oven 30 minutes. Remove foil; cool slightly.
Dust with sugar and serve with whipped cream if you wish.
Makes 8 servings. |
