Frozen English Toffee Pudding
Ingredients:
1/4 lb vanilla wafers
2 c powdered sugar
2 Tbsp cocoa
1/4 tsp salt
1/2 c butter or oleo
1 Tbsp butter or oleo
1 c chopped pecans
2 eggs, separated
1/2 tsp vanilla
Instructions:
Crumb vanilla wafers & mix in a tablespoon butter which has been melted. Use 3/4
of mixture to cover bottom of 8" square pan or 2 long refrigerator trays. Sift
the
sugar, cocoa & salt together and cream into softened butter, add egg yolks,
vanilla
& pecans, mix well. Fold in beaten egg whites and spoon over crumbs. Top with
remaining crumbs and freeze. |
