Frosted Pumpkin Doughnuts
Ingredients:
2 eggs
1 cup sugar
2 tablespoons butter or margarine, softened
1 cup cooked or canned pumpkin
1 tablespoon lemon juice
4 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup evaporated milk
Oil for deep fat frying
Frosting:
3 cups powdered sugar
2 to 3 tablespoons orange juice
1 tablespoon evaporated milk
1 teaspoon grated orange peel
Directions:
In large bowl, beat eggs, sugar and butter. Add pumpkin and lemon juice. Mix
well. Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg.
Mix alternately with evaporated milk. Cover and refrigerate 2 hours.
Turn out on floured board. Knead five or six times. Roll to 3/8-inch thickness.
Cut out doughnuts using 2-1/2-inch cutter.
Heat oil in electric skillet to 375 degrees. Drop a few doughnuts at a time into
electric skillet. Fry 3 minutes on each side until golden brown. Remove and
drain on paper towel. Prepare frosting by combining all ingredients. Frost when
doughnuts have cooled.
