Honey-Peach and Mint Lemonade Recipe

Honey-Peach and Mint Lemonade          

6 lemons
3 ripe peaches, peeled, pitted, and cut into chunks, or two cups peach juice
8 cups spring water
1/2 cup mild honey
Fresh mint sprigs

Squeeze the juice out of the lemons and set aside. Purée the peaches in a blender or food processor.

Bring 2 cups of the water to a boil. In a heatproof pitcher, dissolve the honey in the boiling water. Add the rest of the water, lemon juice, and pureed peaches. Stir to mix well. Add a few sprigs of fresh mint. Refrigerate until very cold.

Makes 8 to 10 servings

Note: I prefer to strain the peaches or use my juicer to avoid pulp in the drink.
