This spicy, fragrant soup is so good, you won't believe it is low in fat. Ingredients: 1 onion, finely chopped 2 garlic cloves, finely minced 3 tsp curry powder 2 - 28 oz cans of plum tomatoes 4 cups fat-free chicken broth 1/4 tsp cinnamon salt to taste 4 cups cooked fat-free noodles Method: Spray a heavy soup pot with non-stick cooking spray. Add onion and cook over low heat for 5 minutes. Add garlic and curry powder and cook for a few more minutes, stirring constantly. Chop tomatoes and add to pot with their liquid. Add 2 cups chicken broth, cinnamon and salt. Simmer over medium-low heat, partially covered, for 25 minutes. Remove from heat and cool slightly. Puree soup in a blender in small batches and return to the pot. Add remaining 2 cups chicken broth. Adjust seasonings and heat through until piping hot. Divide the cooked noodles among 8 soup plates. Ladle hot soup into bowls. Yield: 8 servings. |
