Ingredients: 2 cups fat-free chicken broth 1/3 cup chopped green onions 1 tsp. grated lemon peel 1 cup rice 1 Tbsp. lemon juice 1/8 tsp. ground pepper Method: Lightly spray medium nonstick saucepan with nonfat cooking spray. Add 2 teaspoons chicken broth and heat over medium-high heat. Add green onions and lemon peel and cook 2 minutes. Add rice, remaining chicken broth, lemon juice and pepper. Bring mixture to a boil over high heat; reduce heat to low, cover and simmer 20 minutes. |
